This is a video illustrating what parkouring is. It doesn't necessarily have to be from building to buidling but as long as it's one structure to another. This particular video was compiled by a group of French people (hence the french in the beginning of the video).
You can even do parkouring in a forested area as these two guys did. It's probably easier and a little safer for the little guy who isn't into heights as much but can still do the acrobatic tricks.
Parkour has also been integrated into mainstream culture as seen by this clip from The Office. Yes they are heavily parodying it and it is undeniably hysterical, but Jim perfectly describes parkouring at the beginning of the clip as "getting from point A to point B as creatively as possible".
